Sometimes the edge stops responding entirely. Neither restarting the app nor the entire iPhone does solve that issue. I can perfectly do anything done on my iPhone and even open edge, but in edge no button or content will respond. This happened to me on content pages but also the empty page view. By opening another link from some source on my phone edge opens and displays the new site but keeps not responding to any interaction.

Try update your iPhone and also visit the App Store and update to the latest version of Microsoft Edge.
