When running edge on iOS iPad there is no symbol in the toolbar for extensions nor is there a method using the gear symbol.
also the address edge:/flags has no entry for it. How can we make it show up?

Are you using the latest Microsoft Edge from the App Store?
Microsoft does not support extensions on the iPad version of Edge. The mobile version only includes basic features. This is why you do not see any extension icon or edge:/flags option. Use built-in features such as Collections and Tracking prevention instead.
If you want Microsoft to add extension support, open the three dots menu and select Send feedback.
