May I ask are you using Microsoft Exchange Server as your provider or are you using from a third-party provider?
If you are using Microsoft, choose Microsoft 365 so Outlook connects using Modern Authentication and the supported Exchange protocols (MAPI/HTTP). Using EAS for an Exchange mailbox will break full calendar/contact features and integrations like meeting invitations (the issue that you are seeing).
If you are using another provider, use IMAP/POP this for providers that publish IMAP/SMTP with OAuth2/Modern Auth. It normally will sync email-only, calendar/contacts are limited unless the provider supports those. Sync basics - what you can and cannot sync - Microsoft Support
EAS is designed for mobile sync (mail, calendar, contacts) and is not a replacement for full Exchange connectivity on desktop. So, it might break the meeting invitations. Exchange ActiveSync | Microsoft Learn
