OK, it is still an option, but it is pretty hidden for some reason. It isn't available as an column in the admin center anymore, which makes it hard to find. But a trick is to sort by the members in each Team, and if you check the Teams that have everyone in your company, those are probably the 5 org-wide Teams. You can change them from the admin center, I believe. If not, you can change it directly in the Teams setting.
Org-wide team option is missing in our teams section
We do not have an option to have an Organization wide teams option when creating a teams page. Only provides option for public or private. Our global administrator is not sure how to add this feature.

My client cannot see the option - either in Admin Centre OR directly in Teams.
He is a Global Admin, they have < 10k members.
The only other reason may be around having Education licensing - but there is NO MS documentation to support this - just some noise around the forums.
Anyone else experiencing this issue and has Education lics?
