I understand your frustration. It can be very disruptive to have Teams restart during an online training session.

However, there are a few things you can do to minimize the impact of the updates:
>> Check for updates manually. You can check for updates manually by going to Help > Check for updates in Teams. This will force Teams to check for updates, even if it is not idle.
>> If the desktop client of Teams is causing disruption during your training sessions, you could try using the web version of Teams instead. This version of Teams does not require any installation, which means that there are no automatic updates.

Also, I would suggest submitting feedback to the Teams app by selecting the Help button at the bottom lower-left of Teams and then choosing to Suggest a feature or Give feedback to tell us what you think. So that they can include the additional features that you want to see in future releases.
